Italian Roasted Vegetables
1/2 lb. mushrooms
1 1/2 cups baby carrots
1 medium onion, cut into 1/2 inch thick wedges
1 large bell pepper, cut into strips
1/3 cup Zesty Italian dressing
1/4 cup Parmesan cheese
Toss everything together. Pour onto a baking pan (about 15×10) that has been sprayed with cooking spray. Bake at 450° for about 25 minutes or until vegetables are tender. Sprinkle with a little more Parmesan cheese when done.
