I roast anywhere between 350 and 450. Higher temps are obviously finished sooner (it'll usually take between 30-60 minutes). You'll know when they're done because they darken up and carmelize.
I usually put my veggies in a ziploc with some olive oil and garlic salt and shake it all up. Then I lay them out on a cookie sheet covered in aluminum foil and roast. I also shake the sheet a few times during baking.
I do veggies at a high temp, as in 400+ and I always have them on a metal tray, no glass or ceramic as the metal reflects the heat and makes them brown....hmmmm
I can eat an entire clumb of broccoli roasted, I cut the broccoli in spears and do them till the heads are almost black..
I've been roasting fresh green beans and asparagus at 350 for 15 min. I think broccoli and cauliflower take longer but haven't done those in a long time.
