Slow Cooker Tomato and Spinach Soup:


Slow Cooker Tomato and Spinach Soup:

1 6 oz bag of baby spinach
2 medium carrots chopped
2 stalks of celery chopped
1 large sweet onion chopped
1 tablespoon minced garlic (adjust to taste)
4 cups of vegetable broth
14 oz can of petite diced tomatoes
14 oz can of diced tomatoes with chilies
1 tablespoon dried basil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes


Stir all ingredients in a slow cooker and cook on low for 5-6 hours. Freezes well
